Ingredients for this green mango recipe Serves 3 to 4 - 1 green (unripe) mango – grated
- Indian jaggery or another brown sugar to taste – use organic if you can
- Water
- 1 teaspoon lime juice – freshly pressed
Green mango recipe preparation method Cooking time: 4 minutes. Preparation time: 5 minutes. - Peel the mango and grate it. Discard the stone.
- Add the grated mango and 4 parts of water to a pot and bring to a boil.
- The size of mangoes varies, so, for instance, if you have 1 cup of grated mango, add 4 cups of water.
Boil the mixture for 4 minutes on low-medium heat. Remove from heat. - Add jaggery or sugar to taste and 1 teaspoon of lime juice.
- Strain the mango juice and that's it: it's ready to be served.
