This green mango recipe is quick and easy but, more importantly, it's a delighful refreshing juice that tastes gorgeous. Strictly speaking, it isn't Mediterranean diet, but it has the same spirit: natural, healthy AND delicious.

Ingredients for this green mango recipe

Serves 3 to 4

  • 1 green (unripe) mangograted
  • Indian jaggery or another brown sugar to taste – use organic if you can
  • Water
  • 1 teaspoon lime juicefreshly pressed

Green mango recipe preparation method

Cooking time: 4 minutes.
Preparation time: 5 minutes.

  1. Peel the mango and grate it. Discard the stone.

  2. Add the grated mango and 4 parts of water to a pot and bring to a boil.

    • The size of mangoes varies, so, for instance, if you have 1 cup of grated mango, add 4 cups of water.

    Boil the mixture for 4 minutes on low-medium heat. Remove from heat.

  3. Add jaggery or sugar to taste and 1 teaspoon of lime juice.

  4. Strain the mango juice and that's it: it's ready to be served.
