My vegetable soup with sofregit
One of the basic recipes I have introduced in my everyday cooking is the sofregit. I find it a very useful and rewarding basic sauce. It makes the most simple ingredients tasty.
For example, when I don't have much time to prepare lunch, I cook a good sofregit, then add some vegetables of the season, and ready is my sauce for rice or pasta.
The sofregit also works very well for soups. I cooked an alternate version of your "Soup with mushrooms". As I had no mushrooms, I added various vegetables: carrots, a bit of cauliflower and particularly celery which suits well as it is a little pungent. And ready was a delicious soup.
