| Succulent peach dessert recipes | A sweet dessert wine, seasonal peaches, a few spices and the stove top is all you need. Or you can make it with champagne and other wines... The most important thing is that you choose firm fleshed peaches, otherwise they'll disintegrate in the cooking pot. Regarding the sugar, you can use white or brown sugar. I use brown sugar with these peach dessert recipes, as it works perfectly well and it's healthier. The sweet dessert wine can be muscat, muscatel or a similar sweet wine. Typically, I use Catalan moscatell for this recipe. 
Ingredients for the peach dessert recipes Serves 4 A. Peaches cooked in sweet dessert wine - 4 yellow medium-sized firm-fleshed peaches – use pressecs de vinya, peches de vigne or a similar variety
- 1 quarter (1 l) sweet dessert wine – use moscatell, muscat, muscatel or a similar sweet wine
- 4 tablespoons (50 g) sugar – brown or white sugar
- ½cinnamon stick
- 2 small pieces of lemon rind
- 1 clove
- 3 mace blades – substitute for ¼ teaspoon nutmeg, fresh grated, if you don't have mace
B. Peaches cooked in white wine, red wine, cava or champagne The ingredients are the same. You only substitute the sweet dessert wine for cava or your choice of wine, and increase the sugar to 8 tablespoons. The method of preparation is also the same regardless of the type of wine you choose to use.
How to prepare the peach dessert recipes Preparation time: about 5 minutes. Cooking time: 80 to 90 minutes. - Peel the whole peaches. Do not cut them.
- Add the sweet wine, the peeled whole peaches, the cinnamon, the lemon rind, the sugar, the clove and the mace (or the nutmeg) to a saucepan. Stir briefly with a wooden spoon and bring to a boil over medium heat.
- When the mixture boils, turn the heat to medium-low and cook partially covered for 80 to 90 minutes. When the peaches are tender, they are done.

Personally, I find the first version —in sweet dessert wine— of these fruit dessert recipes the most exquisite. It is also the one backed by a longer tradition. In the case of pears, it's the other way round, their aromas shine better through with strong red wine. Pears in wine are a great alternative to peach dessert recipes.
