Beyond those internationally acclaimed rice dishes, in the Mediterranean Catalan Countries we have a remarkable family of rice recipes that are little known beyond our borders. Many of them are so delicious, inexpensive, nutritious, sophisticated or easy to prepare that I want to share them with you, the visitor of this Mediterranean food website.

Rice recipes are endless, and have played an essential role in our eating practices and cuisine. One of the reasons of rice versatility is that it absorbs easily the flavors of other foods. Rice combines naturally with fish, seafood, meat, poultry, vegetables, eggs, fruit, nuts; it mixes harmoniously with virtually any food.

Rice allows home cooks to prepare myriad rice dishes with different flavors and colors, expensive o inexpensive, fast or slow, for everyday or for formal celebrations, dry or juicy. It's up to the home cook, and the particular needs of the guests.

We can sort out rice recipes according to the amount of water you add to the cooking rice, the cooking method, or the cooking utensil for cooking a rice dish.

For dry rice dishes the proportion is two to one. For example 2 cups water to one-cup rice. For sticky rice recipes we use a three to one proportion. And for rice dishes with consomme the rate is four parts of water to one of rice.

As for the kitchen utensil used for rice recipes, we have rice dishes cooked with casserole, in the oven, with a paella pan or in regular frying pans.

Finally, we have the traditional arròs a banda, for which you first prepare a fish broth that you pour over the rice.
